Low Carb Lemon Scones
Dry ingredients:
2 1/2 cups Almond Flour (NOT almond meal)
1/2 cup Splenda (or sugar)
3/4 teaspoons baking powder
1-2 teaspoons fresh lemon zest
1/2 teaspoon salt
Wet Ingredients:
2 eggs
4 Tablespoons butter (I use Kerry Gold)
1 teaspoon lemon juice
2 Tablespoons half & half or milk
Preheat oven to 350 degrees.
Combine wet and dry ingredients. Scoop spoonfuls onto a baking sheet. Bake in a 350 degree oven until golden brown.
Cream Cheese Frosting (Optional)
4 oz cream cheese
2/3 cups Powdered Sugar (or Swerve sugar free powdered sugar)
1 teaspoon lemon juice
Mix well. Frost cooled scones.
If you prefer traditional lemon glaze, substitute butter for cream cheese.
A word about substitutions:
This recipe is intended to be low carb and sugar free. Some substitutions will change the texture.
Flour - I have only ever made these scones with almond flour. I know that whole wheat flour will make these scones heavy and hard. I am uncertain about other flours.
Sweetness - This is not a super sweet recipe. As written it is lightly sweet. For added sweetness try Splenda baking blend or real sugar.
Lemon Juice - I’ve made this recipe with real and bottled lemon juice. Though I prefer real juice, the bottle juice version came out just fine.
