Easy Fresh Cilantro Dressing

This recipe is my own accidental creation and I'm totally in LOVE with it! I'm a busy working mom with a very tricky tummy. I enjoy a great salad but I can't digest most dressings. Last, but certainly not least I'm kind of lazy. I don't have time (or inclination) to do a lot of prep just to make a little salad dressing.
I whipped up this dressing based on what I had in the kitchen at the time. Feel free to swap out oil or acid to fit your personal tastes. I'll offer a few swaps so you can find what works for you.
Fresh Cilantro Dressing
For this recipe you will need:
Blender or Food Processor (A bullet blender works GREAT!)
Cilantro, Tomato, Onion, Honey, Oil and Vinegar - That's it! |
1 handful of fresh cilantro - washed (leaves, stems and all)
1 whole plum tomato
1/4 small onion (unchopped)
1/8 c. olive oil (or your favorite oil)
1/8 c. cider vinegar (or lemon juice or lime juice or orange juice)
1 1/2 teaspoons of honey (I use honey powder because it's less messy)
Tabasco to taste OR 1 small jalapeno (optional)
Salt and pepper to taste
Put everything inside the blender. Put the lid on tight and let it run until everything is smooth and blended. I usually start the blender on low to get everything chopped up. Then I turn it to high to get everything nice and smooth.
Total blending time is usually about 2-3 minutes.
Store unused dressing in a sealed container in the refrigerator.

Due to my tricky tummy I also can't digest Mayo. This dressing makes a GREAT replacement for mayo in chicken salad.
Toss it on chopped cooked chicken and you've got cilantro chicken salad!

Cooked chopped chicken
Cilantro Chicken on a bed of greens |
Chop the chicken and add as much dressing as you like.
Enjoy the chicken salad with bread, crackers or on a bed of greens!
