Salmon Patty


1 can (14.74 oz) salmon (drained)

3 eggs

1/2 onions (minced)

½ cup quick oats

2 Tablespoons prepared mustard

2 Tablespoons lemon juice

Salt, pepper, hot sauce to taste


3 Tablespoons canola or olive oil for frying


Drain liquid from canned salmon.  Using a fork (or your hands) combine salmon (including bones and skin), eggs, onion, oats, mustard, lemon juice, salt, pepper and hot sauce.


Set mixture aside for 15 minutes to allow ingredients to come together.


Heat oil in a large skillet.  Scoop salmon mixture into hot skillet (I use and ice cream scoop).  Flatted scoops into patty’s.  


Fry patty’s until they are brown and hold together.  Flip over and fry the second side until crispy and brown.


Place patty’s on a paper towel to drain.


Serve hot, room temp or cold.


Note - This recipe can also be made with tuna.
