Roasted Cabbage - Easy Vegan Side Dish

Roasted Cabbage
This is the ONLY way I can get my kids to eat cabbage.  Lucky for me it's SUPER easy to make!

Roasted Cabbage
1 head of cabbage
Olive Oil
Salt
Pepper

BBQ Sauce (optional)

Preheat the oven to 400 degrees.  Lightly drizzle olive oil on a large cookie sheet.  Slice cabbage into 1/2" - 3/4" slices.  Arrange slices on the cookie sheet in a single layer.  Lightly drizzle slices with olive oil.  Sprinkle with salt and pepper.  Place in the oven for about 30 minutes or until cabbage is golden brown and soft.  Flip cabbage sliced over and roast the second side until brown.  About 15 minutes.

Enjoy!

This dish can be served hot or at room temp.


For BBQ Cabbage:
Brush cabbage sliced with BBQ sauce before roasting.  When the slices are turned, brush with additional BBQ sauce.
