Pineapple Skillet cake is a dessert that I totally made up off the top of my head.  It's like the lazy woman's version of pineapple upside down cake.

Pineapple Skillet Cake

My cakes tend to be super easy.  I'm not a fussy person and I like recipes that are not too fussy.  You'll have to work very hard to mess up this recipes!

Pineapple Skillet Cake

1 can crushed pineapple (in its own juice)
1/2 brown sugar

Cake Ingredients:
1 1/4 cups all-purpose flour
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 Egg
1 teaspoon vanilla
1/4 cup butter or Margarine, melted OR canola oil
3/4 cup milk

Preheat the oven to 350 degrees.  In a 12" skillet combine pineapple and brown sugar.  Heat over a medium flame.

In a large bowl combine all of the cake ingredients.  By the time you've combined the cake ingredients the pineapple should be bubbling.  Stir the pineapple and remove from heat.

Carefully pour the cake batter into the skillet that contains the pineapple.  DO NOT STIR!

Bake for 30 minutes until cake is golden brown.

Combine brown sugar and crushed pineapple

Heat until bubbling

Mix up the cake batter

Carefully pour the cake batter over the pineapple

Bake for 30 minutes

Serve warm!

So easy!!!!!
