|Egg Salad on Whole Wheat Bread with Fruit|
I work in New York City and I'm surrounded by food. ALL kinds of food. So I'm not going to sit here and act like it's a hardship to find something to eat for breakfast. The problem for me is in finding something I actually want to eat. As I've mentioned before I have a tricky tummy and lots of foods make me sick. I can't eat processed, greasy or high sugar foods. My office has no microwave or refrigerator and electrical appliances are not allowed. I work in an 80 year old building and even the smallest appliance will blow a fuse.
On the positive side, we have a company cafeteria with a salad bar and hot water for coffee/tea.
This morning I hit the company cafe and bought 2 hard boiled eggs, fruit and 1 slice of wheat bread.

I hit my desk top condiment collection to whip up a nice batch of egg salad.
This is hardly a recipe. (more like desk top brain storming a la Chopped) But, here it is!

Cubicle Cuisine - Low Fat Egg Salad
For this recipe you will need:
2 hard boiled eggs
2 packets sweet relish
1 packet Spicy Brown Mustard
1 packet Low Fat Mayo
1 packet Grey Poupon Dijon Mustard
Salt and Pepper to taste
Plastic ware (Spoon, fork, knife)
Container for mixing
Cut the eggs in half and mash them with the fork. Add the rest of the ingredients.
Serve with crackers, bread or on a lettuce leaf.

This is obviously a SUPER easy (and delicious) recipe. You could even add tuna or shredded carrots for extra yumminess!
My goal is to see how many different meals I can prepare in my cubicle without a microwave or refrigerator. Maybe I'll borrow my co-workers cup warmer since it doesn't seem to mess with the office electrical system.
